Lettuce Discuss… Awesome Alfredo Sauce with Gluten Free Penne Pasta (All Vegan)

Ingredients

1 Tablespoon of Olive Oil

4 Spring Onions

1 Cup Fresh Peas or a Tin of Peas

½ teaspoon of Sea Salt

½ teaspoon Pepper

¼ Red Pepper Flakes

¼ Thyme, dried

6 Tablespoons of Nutritional Yeast

3 Tablespoons of Gluten Free Flour

1 Cup Hemp Milk

For the Pasta

3 Cups of Pasta (We used Penne)

1 Tablespoon Olive Oil

Instructions

First, boil your Gluten Free Pasta Al dente style by adding 1 Tablespoon of Olive Oil to the water to prevent the pasta sticking together. While this is cooking… Lets make the Alfredo Sauce!

In a Wok add 1 Tablespoon of Olive Oil and add the Spring Onions and fresh green Peas, cook for 3 minutes.

Add Sea Salt, Pepper, Red Pepper Flakes, Thyme, mix well and cook for another minute to marry the spices.

Add Nutritional Yeast, mix well cook for another minute.                                                          (we use Engevita Nutritional Yeast found at our local health food store here in England, for the USA see icons below!)

Add Gluten Free Flour, mix the dry flour into the Veggies, cook for another minute, this gives the veggies a nice flour coating.                                                                                             (We use Doves Farm Bread Flour found at Tesco here in England, for the USA see icons below!)

Next, add the Hemp Milk, mix well, continue cooking for another minute until the milk is nice and hot. (We use “Good Hemp” found at Tesco or Asda here in England, for the USA see icons below!)

Finally, add your drained al dente Pasta, mix well, cook for 3 minutes, lightly stirring.          (We use “Free From” found at Tesco here in England, for the USA see icons below!)

Lettuce Discuss… CREAMY VEGAN TOMATO SOUP

Ingredients

2 28-ounce tins of whole peeled Tomatoes in juice

1-2 Tablespoons *Raw Sugar (depending on how much sugar is added to your tinned Tomatoes)

3 Tablespoons Extra-Virgin Olive Oil

4 Garlic cloves, minced

2 medium yellow Onions, diced

1 Red Bell Pepper, finely chopped

1 Cup chopped Cauliflower

1 teaspoon dried Oregano

1 teaspoon fresh Basil

Dash of Red Pepper Flakes (optional)

6 tablespoons Nutritional Yeast Flakes (more or less to taste)

2 teaspoons Sea Salt (more or less to taste)

Instructions

Add Olive Oil to a large pot and heat over medium heat.

Add in Garlic and Onion. Cook for 3-5 minutes until tender.

Add in the Red Bell Pepper and cook for another 2 minutes.

Add in the Tomatoes, Raw Sugar, Cauliflower, Oregano, fresh Basil, and Red Pepper Flakes

Bring the mixture to a boil. Reduce heat, cover, and allow the mixture to simmer for 25 minutes.

AT THIS TIME… MAKE YOUR GRILLED CHEEZZ BUTTY (Sandwich)

We use our Vegan Gluten Free Bread and Vegan Flavored Cheese and Mayo found at our local Health food store! If you are looking to add more comfort… we add Soy Free Earth Balance Butter to the bread before grilling for that real grilled cheezz flavor!

Turn off heat and purée mixture with an immersion blender for 5 minutes or until the mixture is smooth.

If you don’t have an immersion blender, you can add the mixture to a blender or a food processor…return soup to pan once blending is done.

Add in Sea Salt (to taste) and Nutritional Yeast.

If soup is thicker than desired, add in ¼ to 1 cup water and whisk into soup slowly!

*NOTE: Adding sugar does balance the acidity of tomatoes. You don’t need much, maybe a teaspoon or so. A lot depends on the tomatoes you use. If using canned tomatoes -there may already be some sugar added.

Say good-bye to cardboard texture, tasteless vegan gluten free pancakes,

We got a new sheriff in town… The Perfect Vegan Gluten Free Pancakes!

Ingredients:

1 Cup Gluten Free Flour

2 Tablespoons Raw Sugar

1 Tablespoon Baking Powder

2 Tablespoons Olive Oil

1/8 Sea Salt

1 Cup Vegan Milk (we used Hemp milk for this one)

Instructions:

Mix all ingredients together

Let sit for 5 minutes, Watch it grow!

Lightly oil cooking pan and cook away the Perfect Pancake!

BOOM!

Lettuce Discuss… Vegan Anytime Olive Spread!

This simple Olive Spread intensifies any meal with a delicious essence, and BONUS it has added health benefits, YEAH!

Ingredients:

1 Cup / 240 ml Green Olives

1 Cup / 240ml Black Olives

2/3 Cup / 180ml Vegan Mayo

2 Tablespoons Vegan Butter

4 teaspoons of Nutritional Yeast

1 teaspoon Whole Grain English Mustard

½ teaspoon Sea Salt

½ teaspoon Pepper

Instructions:

Blend all ingredients in a Food Processor or Blender

Et Voila~

We have used this delicious spread to enhance a Veggie Burger Sandwich, and Vegan Pizza!

Health Benefits:

Olives are the highest potassium food, potassium is essential for heart health. You can make a simple tea to help lower your LDL Cholesterol therefore reducing the risk of coronary heart disease. Take 10 olives cut them in half, place them in a cup and cover with boiling water. Let them steep for 10 minutes and drink. Leave the olives in the cup and eat if you want too when you’ve finished the tea.
