For best results drink 1 Pint per day but break it down to coincide with meal times so drink ¼ Pint with each meal and one before bed. As these are all good for you anyway you can’t over do it although you would become bored drinking the same thing every day.

If you suffer from depression Please avoid Cranberries, Rhubarb and Green Plums. The high acidic values will not help but can contribute to depression.

Lettuce Discuss … Super Delicious Vegan Chocolate Spread!

Using 4 Healthy Vegan Items plus any natural flavoring of your choice!

Ingredients:   (Ingredient breakdown after recipe –to be fair!)

2 Bars of dark chocolate of your choice

½ Cup of Raw Organic Cane Sugar

½ Cup of Non Dairy Milk (we use Almond Milk)

2 Tablespoons of Dairy Free Butter.

Step 1:

Use a large pot, fill ¾ with water -bring to a boil, reduce heat.

Step 2:

Use a glass bowl and place into the pot of boiling water, make sure no water gets into the bowl.

Step 3:

Break up the chocolate bars and place into the bowl along with all other ingredients.

Slowly mix and combine all ingredients. The chocolate will start to melt.

Once all is mixed well. Turn stove off. Allow to cool for a few minutes.

At this time you can add natural flavoring…

Sea Salt

Hazelnut

Nutmeg

Cinnamon

Mint, or anything you wish.

Pour in glass jar (we recycle our old marinara sauce jars) and refrigerate. The Chocolate Spread will be liquefied that this time however, after refrigerated it will be a spreadable solid.

Great on Peanut Butter Toast!

Chocolate Bar: Good for you. GOOD. Cocoa Solids, cocoa butter , fat-reduced cocoa powder , raw cane sugar , vanilla extract . Cocoa solids are one of the richest sources of flavanol antioxidants. Raw Cane Sugar: GOOD. Quick The cane is squeezed so the juice can come out, the juice is dirty so it is mixed with slake lime (a relative to chalk) this settles out the dirt. The juice is then evaporated to thicken the mixture. The mixture is boiled in a large pan until it is the right consistency to turn into crystals. The crystals are given a drying with hot air. This is the simplified version. There are no additives or chemicals. Raw sugar is the way to go.

Lettuce Discuss … “That” Chocolate Spread!

Before we became Vegan we both used to love this “Spread” Once we had a look inside the Ingredients…

We were amazed. Here is the break down and how they get the ingredient.

Sugar: NOT GOOD, Refined sugar is made from a processing and bleaching process, not bleach off the shelf but chemicals that react to make it white. Often Bone Char (taken from the bones of murdered cattle) is used in refining sugar. Unless you know where the sugar comes from it may not be Vegan. Know your food!

Unrefined beet sugar is perfect, no bone char is introduced anywhere near it as are turbinado sugar, organic evaporated cane juice, organic dehydrated cane juice, and organic cane sugar.

Palm Oil: NOT GOOD, Our old friend Palm Oil. Palm oil is worse in some instances than animal fats (not that I would ingest either) Palm Oil causes Hypertension, It is high in fat, it is a saturated fat, its high in cholesterol, it is also reported to block the receptors in the brain that shout out “I’m full, stop eating”. Palm Oil also causes inflammation that is linked to insulin resistance (type 2 diabetes)! It’s associated with obesity and other metabolic disorders. On a humanitarian level the planting of palms for palm oil is cutting back the natural environment for Orang Utans, if they could speak I would imagine they would hate palm oil too.

Hazelnuts: GOOD, some people are allergic to hazelnuts but they are generally good for you. They are rich in dietry fibre and folates, are a great source of energy, contain vitamin E, they are full of health promoting phyto chemicals. Pretty good and quite sweet too. We avoid them here because Hema is REALLY allergic so we have no cross contamination.

Cocoa: GOOD, Cocoa solids are one of the richest sources of flavanol antioxidants. Oh yeah, cocoa is great for migraines, menstrual pains, and just tastes really good. No complaints over cocoa.

Skim Milk: NOT GOOD, A study conducted by the University of Hawaii in 2007 suggested that drinking, using in cooking of low fat milk (skimmed) may increase the risk of low-grade prostate cancer tumors. Did you know that to get a cow to produce milk they first get it pregnant and then take the calf away so it keeps producing milk!

 Whey (milk): NOT GOOD, derived from milk see above.

 Lecithin (soy): NOT GOOD, see our blog on soy lecithin

Artificial Vanillin: NOT GOOD, artificial vanillin is made up from petroleum! Yep if you want some fuel (and I mean FOSSIL Fuels) eat nutella and other chemically derived spread! However, Organic Vanillin is good.

Vegan Cheese Spread

One of the things that we really missed becoming vegan was cheese. Especially Mac Cheese! As we really try to avoid Soya and are totally Gluten free it was difficult. We have tried many recipes for cheeses and have developed a hybrid of them all that you can make in around 30 minutes. It’s delicious and makes a great spread or dip and you can spice it up if you like it spicy…

Ingredients

2 Cups Potatoes (chopped into 1 inch chunks) you can peel the skin off or leave on

2 Cups of Carrots (Chopped into ¼ inch chunks)

1/3 cup of Olive Oil

½ Cup of Water

1 teaspoon Rock Salt

½ teaspoon of Garlic Powder or 1 clove of fresh garlic

½ teaspoon of Onion Powder

½ teaspoon of Turmeric

½ Cup of Nutritional yeast

1 Tablespoon of Lemon juice or the zest of a fresh lemon.

Method,

Step 1

In a pan place your

2 cups of potato and

2 cups of carrot

Cover with boiling water and continue to boil for 15 minutes

Step 2

In a food processor or blender add the remaining ingredients and blend them together for 30 seconds leave them to rest in the Blender / Food Processor.

Step 3

After 15 minutes remove the carrots and potato and drain the water from the pan. Rinse in cold water to cool them down place the potatoes and carrots into the food processor and mix until the ingredients are all blended evenly and the mixture is smooth. That’s it done simple.

We find the longer you leave it in the fridge the better it becomes (a day or two).

You can also make different styles by adding ground hemp seeds, dried chilies, sunflower seeds, chopped or ground cashews. The options are endless.

Lettuce Discuss… The Importance of Essential Vitamin B12 for Vegan’s

You should be getting at least 1.5 mcg of B12 per day.

If you are Vegan you need to make sure that you are getting enough B12. This  only occurs naturally in animal derived foods. Therefore, being Vegan we need to supplement it. If you are B12 deficient this can cause the following,

Anaemia, caused by a lack of vitamin B12 can result in symptoms that include:

A lack of energy or lethargy, fatigue, tiredness.

Being out of breath, faintness, headache, ringing in the ears, appetite loss.

More extreme symptoms due to Vitamin B12 deficiency include:

Yellowing of the skin, mouth ulcers, sore tongue, vision problems, mood changes, irritability, and depression.

Vitamin B12 Information

Vitamin B12 is found in fortified foods (these are foods and produce that have had vitamins and minerals added to them). You may have seen nutritional yeast with added B12 (This makes a great Mac Cheese more of that in the next blog).

 How to get B12:

There are many supplements on the market that contain B12, you need to make sure that they contain 1.5mcg or more also make sure that they don’t contain Meat derived gelatine.

Little and often is key with B12.

Fortified Cereals (all Bran) contains B12.

A Brief list of B12 fortified supplements

Almond Milk, Fortified 1 Cup contains 3mcg, nutritional Yeast, 1 tablespoon contains 3mcg, Vegan Mayo 1 serving 0.24mcg, Tempeh ½ cup approx 0.12mcg, Ready to eat cereal fortified with B12 ½ to 1 cup 0.6 – 0.66mcg.
