Lettuce Discuss… Lemon Poppy Seed Muffins

1 ½ Cups Gluten Free Flour

1 teaspoon Baking Powder

¼ teaspoon Sea Salt

1 Cup Raw Sugar

2 Egg Replacer

½ Cup Vegan Butter

½ teaspoon Vanilla Extract

½ Cup Butter Milk (1 Tablespoons of Lemon Juice mixed with Almond Milk)

¼ Cup Almond Milk

2 Lemons for the Rind

1 Tablespoon of Poppy Seeds



Preheat oven to 350 degrees f. (Gas mark 4)

Line muffin baking pan with paper or foil liners (If you are using paper liner we suggest applying a drop of olive oil and coat the paper liner to avoid batter sticking).

Prepare the 2 Egg Replacer in a small bowl and set aside.

In a medium bowl add the Gluten Free Flour, Baking Powder, Sea Salt, and Raw Sugar, mix well. Add the 2 Egg Replacer, Vegan Butter, Vanilla Extract, Butter Milk and Almond Milk, mix well.

Take the 2 Lemons and grate the peel take the rind of both and add this to the mixture, Next, add 1 Tablespoon of Poppy Seeds (More if you desire).

Take one scoop (we use an ice cream scooper) of mixture and place in prepared cupcake liner. We add a few drops (2-3 drops) of fresh lemon juice on top of each muffin and an extra sprinkle of Poppy Seeds for additional flavor!

Bake for 20-25 minutes, until a toothpick comes out clean.

One teaspoon of poppy seeds has 4 percent of the recommended daily intake of both calcium and phosphorus, which combine to form the mineral used to build bones. You’ll also get 0.3 milligrams of Iron from a teaspoon of poppy seeds. In addition, you definitely need to consume the daily requirement because your body doesn’t store zinc and it must be available to fill significant jobs. Zinc is needed to support the structure of proteins and for the production and development of new cells. A zinc deficiency impairs your immune system because fewer immune-regulating and bacteria-fighting cells are produced. Men should consume 11 milligrams and women need 8 milligrams of zinc daily. One teaspoon of poppy seeds has 0.2 milligrams or 2 percent of the daily intake for men and 3 percent for women.
An easy way to add poppy seeds to your diet is by mixing them into salad dressings or sprinkling them into Gluten-Free pancakes.
